Flavorful Fridays: Cupcakes

Cupcakes

I like cupcakes.
Okay, I love cupcakes!
I like to make them for every occasion!
Mostly birthdays ;}
Lemon and carrot cupcakes {from the box} used to be my favorite kind to make.
Now....I have a new cupcake recipe book and I love making them even more!

My mom bought a copy of this book for herself, me and my sister.
We've all had the book for at least 2 or 3 months and a couple of weeks ago, I was the first to finally use it!
I have no idea why I waited so long!
Okay, it was because I was very intimidated since I had never baked anything from scratch!
I had looked through the entire book before and new that, eventually, when I finally decided to bake something, it would be the Banana Cupcakes!
Yummo!
They taste simply devine!
I want to bake and eat them everyday.
They are that fabulous!
I chose a banana frosting with toasted coconut and pecans to top it off!
Delicious!
I had never made my own frosting before either and I think it turned out pretty well ;}
{Fyi-my frosting was a little runny because I added extra milk since it was too thick at first}
The frosting recipe made so much that I decided that I better make another batch of cupcakes {the frosting thickened up a little by this time} but wanted to try something different so I searched the list of cupcakes that they recommend to go with the frosting I already made.

Oatmeal raisin cupcakes made the top of the list for me!
They are, after all, my favorite type of cookie!
They were amazing!
Everyone loved them!
Including my husband who is not much of a sweets guy.
Which made it even more exciting and worth the extra time spent to make them
{and it actually was a ton easier and faster than I thought it would be!}

Next up?
I think I'll make some cheesecake cupcakes for husband since that's his favorite dessert!
